Day 6 was the most exhausting day ever! I woke up at 9 and then off the church for my friend's wedding at 10:30, Indy was in the wedding as a ring bearer. Anyways, I played baby rangler (Mom) all day until the wedding at 1:30, He didn't make it down the isle! lol He kept stopping and talking to people he knew, so Sean had to come and get him and take him to the end. Long story short, there was no nap and he went to bed early. Running around all day was really exhausting.
So now to what I ate:
Breakfast: none
Lunch: snacking on foods such as chex mix and grapes
Dinner: 2 slices of pizza
Snack: Swedish fish
So again, not the healthiest day in the entire world, but then again, it was a crazy day! Tomorrow is the day when I get groceries for my vegetarian week! I hope that it goes well!

Day 5
Breakfast: None
Lunch: Chicken caesar salad
Dinner: Vegetarian pizza
Snack: Swedish Fish/Sour Skittles
Today may not have been a success, but I would like to explain what happened at lunch. Being a busy day as usual, my husband and I met up at McDonald's with our 2 1/2 year old son by my side. I was in a hurry and had him order my food for me so I could get Indy settled into his seat. When Sean came to the table, there was chicken in my salad. Was I upset? Not really, I just ate around the chicken (and maybe had a small sliver) and then Indy finished off the chicken.
After that the eating got better (meat wise, there was no meat!)
There will definitely be an improvement on my eating habits coming this week. Right now, I don't really have time to cook healthy meals, but I think that once winter break starts, I will be cooking more and hopefully this will stick when I get back to school in the spring.
I'm going to start looking up recipes and planning them week by week. That a way, I will be able to get the ingredients every Sunday (that's when I go shopping).
This should start this Monday. Hopefully everything will go well...but we shall see.

Day 4
My meat free meals of the day:
Breakfast: Sweet and salty peanut butter bar
Water
Lunch: Macaroni and Cheese
Side salad with ranch dressing
Diet Pepsi
Dinner: Potato wedges
Crackers
Snack: Pizza (peperoni and sausage)
Just a side note, I did pick off the meat.
So that was day 4.
Now I know that there was meat on the pizza, but you have to cut me some slack...I just started this thing.
The last couple of days (1-3) I did ok. The 3rd day was when I slipped up, but I'm not beating myself up. I figure I just started and I still have days to come to perfect my vegetarian ways.

My life, my choice, my goal
So this is my life:
I am a mother, a wife, a grad student, and a graduate assistant. What does this mean? I am a super busy person.
I get up at 8 am with my wonderful husband, off to work at nine, school at 4, and then back home at 6:30. After that my grandparents drop my son off and that's mommy and son time (unless my husband is home, then it's family time) until about 8:45. After that I work on homework till about midnight. Has that schedule held true for forever? Not really, but that's besides the point.
This means though that in my schedule I don't really get good food in my system. Mainly, I get up grab a snack bar, go to work, eat some lunch that I microwave or worse, eat something on campus. I go to school and eat junk for when I come home.
So I decided to make a change. I want to be healthier and I want to make myself cook. My grandparents are kind enough to feed our son when he is over at there house, so I don't have to worry about him and normally my husband is at work. So there is only me to worry about.
Now, I want to eat healthier and I thought going veg would be a great way to start to try. I don't eat pig or cow anyways, why not give up the other stuff. I think this would also force myself to not eat out as much and therefore save me some money! Which is great, because I'm a poor married/college student!
I have break coming up soon and my goal is to eat/cook veg that entire break!!! I hope this goes well. The future goal is to stay veg for a year or until I have mastered it and then try to go vegan.
I also want to document everyday what I eat. I'm hoping that if I blog everyday this will help.
